How come no one eats bear?

I've never really seen bear on a menu at a restaurant, or heard of anyone eating it. I think people hunt them, right? Why don't people eat bear in America?

I only ask because I've recently gotten into exotic food and have tried all sorts of things like rabbit, eagle, dolphin and panda bear (when I was in shanghai last month). I've never seen bear though. I don't know why I've never thought of it until now. Anyone?
 
I think that if people started eating them, then they would quickly be extinct.

I think that is probably why. Or they don't taste good maybe
 
Can't think of any restaurants that serve bear. It is somewhat uncommon mainly because no one farms it and the permits to hunt are limited in most parts of the country if not everywhere. I have had bear a few times (I got a lot of exotic meats from a bro-in-law who had some money and liked to hunt but didn't want to eat it all), and it is ok. Somewhat gamey, but in a different way from other gamey animals, and difficult to tenderize. You have to either cut thin and sear it quick and hot, or slow cook for hours (not a smoker item really, it works ok but is much better in a crock pot with onions carrots and celery). Someone once told me it would be the closest you will get to human since it is a part-time bi-pedal animal with moderate fat stores (at least at hunting time) that is a true omnivore.
 
I heard from someone who killed a bear and ate it that he was told the bear fat is what doesn't taste very good so the processors he used trimmed the meat really well, then ground up the bear meat and added beef fat to it to make little smokeys and he said they were amazingly good.
 
Like others have mentioned, it doesn't taste very good. I'd eat it if I killed one, but I much prefer deer/elk/antelope.

This is how I have had bear steaks that were good. But a lot of game animals are prepared this way or with pig fat.
 
Um, there are a lot of fun theories here, but the only reason you don't see bear meat anywhere is trichinosis.

You have to cook the living **** out of bear meat, which makes it taste like pooh.

Found this on a Google search, which may be helpful: "I have eaten it in burger, roasts and stew. The roasts were done in a crockpot with hours long cooking times. All were excellent. My buddy usually uses Coke as a marinade as the acid breaks down the tough fibers. Orange juice or olive oil/vinegar combos like Italian dressing can have a similar effect. My buddy says that the clock is ticking the minute you shoot and that bear is the most sensitive meat to spoilage he has ever seen."
