Sort of a #BrewDay3.0 opening post on Imu Pits. Feel free to post whatever cool stuff keeps you occupied during waiting season (I expect plenty from [MENTION=840]fishonjazz[/MENTION]). Here's my summer kickoff:

Complemented with taro rolls (poi), killer mac n chee, salad, veggies, party favorite teryaki chicken, baked pineapple, and pineapple upside down cake. My homemade teryaki sauce sucked this time around. Both of 'em :mad:

The taro rolls were a big hit and are pretty easy to make. Try baking some.

Seriously, I've looked at those pics four times and haven't a clue as to what franklin was doing there.

filled with rocks
started fire
covered with leaves
put food in tinfoil on the leaves
covered that with more leaves
covered that with burlap sacks
covered that with a plastic sheet
covered that with dirt
 
The only thing missing was killing and butchering a pig and putting it in the pit.
 
This is and will become an even more badass thread.

It will after it has a ton of JazzFam photos posted in it. Next one I throw requires a sous-chef doe. Way too much work to present hot all at one time. I didn't get the rice out the cooker on time and it got tossed.

I found an easy source for a butchered pig but went safe with my first one. Roasts cook faster and have less juice loss inside those aluminum pans. Plus, if they didn't cook fully in the 6 hour period I could throw them in the oven for a bit. There's also questions on how many banana leaves and wet burlap to throw in.

Next one will be a 50 lb gutted pig completed with an apple in it's mouth. I'm pretty comfortable with the way this one cooked. Plus, I will use electric thermometers pushed through the 4 layered tarp to assure a safe temperature.

I think it's funny that a few people have no idea what you were doing. I grew up in a neighborhood with a large Tongan population and for big family get togethers a live pig or two was pretty much mandatory. I think they frequently gave coming of age boys the first crack at killing the pig.

My neighbors are Hawaiian and had no input. My "old new neighbors" (we coincidentally bought the new lot right next to my old next door neighbors since 2001 within a few days of each other) are Tongan and one daughter didn't know anything but said her dad might. Cool side note: He is the inheriting prince of one of the islands of Tonga.
