Like the idea of 20 hours with the extra time to override fish.

Okay, just check as often as possible.

How about this? At the 12 hour mark, if someone hasn't made their pick, someone (I will if I'm awake) will PM that team letting them know they have only 12 hours left to make their pick. If they don't at the end of those 24 hours, fish picks their player. This seems a bit more straight forward and simple.
