At the tender age of 14, a scout leader tried to make spaghetti out of a dutch oven, and a big pot for pasta just laid on top. Horrible idea. Eddie Spaghetti was his name after that.
Breakfast: Bacon, Potato, Sausage, Egg, Cheese. Cook bacon first, and cut it up into chunks. Remove. Add eggs and some oil, and scramble, but do not over cook. Remove. Throw the remaining ingredients, and some salt and pepper in. Cook for 5 minutes, add the Bacon/Egg back and mix it up. Throw cheese over the top, and cook for another 10 minutes. Eat it plain, or throw it in tortillas for breakfast burritos for an on the go approach.
Dinner: Stew ranks in not only as my favorite, but hardest to mess up. Meat, Carrots, Onion, Celery, Potato. Add some sort of seasoning (sliding scale - Easy = Cream of XXXXXX soup, medium= Thyme, Oregano, Marjoram medley, Hard = Red wine balsamic reduction made pre-camp) and cook until it's all tender and happy. I will mention enchilada casserole as a distant second.
Desert: Hard to argue with Peach Cobbler. But I did enjoy black forest cobbler quite a bit too. One year I was made some sort of cookie monster desert where they had a rolle of cookie dough, flattened it out on the bottom of the oven, and then covered it in some sort of fruit topping(maybe just jam). I had my reservations, but then they put ice cream on it. I found it to be fantastic. If anyone knows what the hell I'm mentioning here, please share the recipe.
Also: not sure what happened to the site, but scoutorama.com is back up, and appears to be kicking. Back in 96 or so, my scout leader owned the domain. He might still be running the show, I have no idea. But there's a large camping/dutch oven recipe section:
