It gets complicated when overly careful and considered people start worrying about appropriation. The burritos these white women were making and selling were made with flour tortillas; it was specifically the taste and style of tortillas made with flour which got them going in their business. Now they’re out of business for stealing the flour tortilla recipe from Mexico. Problem is flour tortillas did not originate in Mexico. They’re from Spain and North Africa. Corn tortillas originated in Mexico. Indigenous Mexicans appropriated making tortillas with flour from Spaniards and North Africans. I love the Red Iguana but their chimichangas are made with flour tortillas. They probably have to close now as well.

2) It shouldn't matter that these are "white" women. If you wanna make tortillas, make some damn tortillas.

3) They didn't steal any recipes. They asked questions and watched the ladies make them. I don't know if you cook much, but it would be pretty damn hard to steal a recipe just by watching them cook. To insinuate they stole anything is crazy, and even if they did (they didn't, but it's a hypothetical), who cares?! A taco bus in Portland is not going to be stealing customers from a restaurant in Mexico.

Yeah, it is crazy. I was trying to poke fun at the absurdity of it all by pointing out the item they were accused of stealing (flour tortillas) did not even originate in Mexico but was itself appropriated. Sorry you missed that. Thought I was being obvious.

PS. I don't really think the Red Iguana should have to close.

Just in case people don't know this...

Google has at least 6 examples of any recipe you could ever want. Good instructions.

From there, if you understand flavors, you can just compare and contrast the recipes, along with your experience eating that dish (if you have, not completely necessary) and make an example of that dish that could be mistaken from originating from a person indigenous to the region where that dish originated. We have the ****ing technology.

My fondest memories growing up were being in the kitchen with my mom and dad. Cooking was a major hobby for them and they liked to try all the ethnic restaurants they could find back in the 80s and 90s in the Salt Lake Valley. They'd eat something they'd never heard of and by taste try to guess at the ingredients and then they'd try to recreate the dish at home. They were pretty good. It was me trying to keep pace with them that made me try to identify individual flavors and understand the interactions between ingredients to build recipes without needing to copy someone else's. But today you can find all the "secret" techniques, ingredients, processes to get flavors just as authentic as someone who grew up making that food in the place it originated. With enough practice it isn't even hard.

Food is the most universal form of expression there could ever be. No one owns flavor. No one has an exclusive genetic link to a recipe.

While on my mission in Honduras, I rarely ate flour tortillas. I could probably count on one hand the number of times I ate flour tortillas. Always handmade corn tortillas.
Granted, it's not Mexico, but the same basic foods.
