I'll admit I haven't/can't watch the Jazz much, but I'm wondering about the play where Burke takes it up the court, then passes it to a wing who then waits for Burke to run around the court off a couple screens, and then gets the ball back and then they run the pick-and-roll. Can someone please explain the reasoning behind this?

PNR is the bailout option in "loop" or "floppy", but plays always work better off action than straight up going into pnr so it's a better option if nothing else develops. Movement gives you a chance to gain the upper hand on defenders and initiate on your terms.

This play has a double pin down screen than can get a wide open shot, a switch with the guard defending a big in the post, or the big can slip the screen and fade for a baseline jumpshot or sneak backdoor if they overplay the guard. You can get good post position for the big on the initiating side of the floor as his defender pays too much attention to the action behind him by cutting off the Trey layup underneath the basket. Also, the guard setting the first pick usually crosses court to the corner and can get a wide open 3 if they pay too much attention to Trey. You can run it without the initial v-cut by the wing and instead have Trey bring the ball down a little slower so they can run "the Harpring curl". You can also run it with a big to establish deep post position.

The Jazz suck at it so it tends to end in side pick and role between the guard and Favors. The scrambling should open up drive and dish three point shots as the defenders aren't in established position to cover the pnr so the others have to pack down and help on Trey and Favors.

***Edit to add***

Those are more traditional options. The Jazz are running it differently to get more three point or paint looks.
