I think vanilla gets a bad rap. It's versatility gets held against it for some reason.This in spades. I swear most people must buy it just to put it on display because it looks the most stereotypically "apple-y". It has terrible texture, that thick skin almost like a layer of wood, and bland flavor. I do not get the popularity. But then again, vanilla is year after year the most consumed flavor of ice cream, so our society must just fit that profile. Crappy and bland.

A cursory Google search bore few results. Cocoa has a lot doing on with it as well. From what I could tell vanilla beans boast a wider variety of volatile compounds than any other spice. A lot of people are so used to artifical vanilla which is basically just vanillin, leaving out hundreds of other flavors.What's the average number of compounds in ice cream flavors?
