And missed a wide open Exum on the next possession. Still, that catch game him and Exum were playing was all on Exum, who refused to make a move into the paint.

No, that is a called play. The Jazz like to call isos when bigs get matched onto guards. Quin has created a thing by passing the ball back to reset the iso match and have the guard catch the ball on the move going downhill to make it more difficult on the defending big. That isnt on Exum, nor is it on Mack for being "selfish", it is simply the playcall.
